The Codfish Tiborna

Tiborna de bacalhau is a traditional dish of Portuguese cuisine, originating in Ribatejo and the Mediterranean diet, characterized by its simplicity and generous use of olive oil. It basically consists of flakes of roasted or grilled cod, served on slices of rustic bread (often country bread or cornbread) toasted and soaked in hot olive oil flavored with garlic.

Historically, tiborna is associated with the grape harvest and the new olive oil season, traditionally being prepared to taste the freshly produced olive oil. More than just a meal, codfish tiborna represents tradition, sharing, and connection to the land, remaining alive on Portuguese tables as an example of how humble ingredients can result in a memorable gastronomic experience.
